For 8 skewers
2 courgettes Fine salt 1 golden delicious apple A few leaves of fresh basil 4 dessert spoons of extra-virgin olive oil 16 thinly-cut slices of Speck Alto Adige PGI 16 mini mozzarella balls
Preparation
Cut the courgettes lengthwise into 16 slices approx. 3 mm thick. Preheat grill or griddle pan and grill courgettes on both sides for a few minutes, adding a pinch of salt to season. Core the apple, chop into 16 wedges and grill for a few seconds on both sides (the apple will cook much more quickly than the courgette). Put oil and basil leaves into a tall container and mix with a hand blender. Thread a rolled-up slice of Speck Alto Adige PGI, a slice of grilled apple, a mozzarella ball and a rolled-up slice of courgette onto the skewers and repeat. Arrange skewers on a serving dish and season with a drizzle of basil oil.
