- 0.5 onion
- vegetable oil to taste
- 136 Grams Speck Alto Adige PGI sticks
- 320 Grams risotto rice
- 0.5 Glass white wine
- 1,000 Milliliters warm vegetable stock
- 250 Grams pears
- 2 Teaspoon pine nuts
- salt to taste
- 40 Grams butter
- grated Parmesan cheese to taste
- freshly ground black pepper to taste
Risotto with Pears and Speck Alto Adige PGI
Total time 45 min
- Peel and finely chop the onion.
Heat about 2 tablespoons of vegetable oil in a large saucepan and sauté the Speck Alto Adige PGI for a few minutes, stirring occasionally. Remove it from the pan and set aside. - Add another 1–2 tablespoons of oil to the same pan and gently sauté the onion until translucent. Add the risotto rice and toast it briefly while stirring. Deglaze with the white wine.
Gradually add the warm vegetable stock, stirring regularly until the rice is cooked al dente. - Meanwhile, peel the pears, remove the cores and cut them into small cubes. Toast the pine nuts in a dry frying pan until lightly golden, stirring frequently, as they can burn quickly. Remove from the pan and set aside.
- About 2 minutes before the risotto is ready, stir in the Speck Alto Adige PGI and the diced pears.
Season with salt to taste, then stir in the butter and grated Parmesan to achieve a creamy consistency. - Serve the risotto with pears and Speck Alto Adige PGI, garnished with grated Parmesan, toasted pine nuts and freshly ground black pepper.
